Choosing a wine

Now I have swallowed my share of the grape in my younger days, Boone's Farm, Ripple, Thunderbird, Captain's Walk Scuppernong and the like,  but I need some advice on a wine to cook red meat with, not to drink. I have been sober since 1998, and don't want to get started again. What is a versatile wine to keep around to use in cooking, other than "cooking" wine? TIA

    I personally use a cheap one with a chicken on it. Can't remember the name, I'm out currently, but it is usually around $5-6.

    @rifrench just about any will do. The most important thing is sugar content. Typically you want a dry wine. While people will say "cook with what you would drink" I do that with cheaper bottles. Sometimes we go with the more expensive bottles, but I am not going to pour half a $40+ bottle of wine to simmer something in all day.  If it calls for a 1/4 cup at the end that is different because you will taste it more. 

    General procedure I follow: take the type of wine a recipe calls for and get a cheaper bottle of that type of wine and you will be set. Cheap is relative.  Personally I think you are fine with a $6-8 bottle as usually you are not using much.  

    Congratulations on being sober!  That is a wonderful accomplishment you have achieved! Keep it going!!

    @Sea2Ski that is it. I don't like wine, my wife is the wino, I usually refer to it as a bottle of "The Big (male chicken)"

    When a recipe calls for a dry red, iI go cheap but with a hint of quality. Try Chateau St Michelle Cab or Bogle Petit Syrah. Works great in all recipes.

  • See i was late there:). We buy black box mini boxes for cooking. Their Cabernet and Chardonnay are both good for cooking. Restaurants use total crap wine to cook with. total 2 buck chuck. Don't overthink it for cooking. Get the cheapest cab or Chardonnay you find.

  • This is black box chard and it is the base (along with $hit tons of butter) for our gold BBQ sauce. We use it for all kids if sauces. The cab is good too.

    Thanks for the good feed back! In regard to cheap, at the last I was drinking Virginia Gentleman, half gallons in plastic....
