Tons of mistakes, but good result nonetheless--overnight brisket cook

After a disappointing first brisket effort (a flat), I decided to jump back on the horse last weekend and try a packer. I was planning to follow Aaron Franklin's method, minus the salt and pepper rub, which I replaced with Dizzy Pig Cowlick. I put the brisket on about midnight. First mistake: I did not set a minimum temperature on my Maverick for the grate or the brisket probe. It started raining while I was asleep, my fire lost some steam, and when I woke up at 6, the grate temp was down to 200. Second mistake: For the first time snce I started with the egg, I did not have enough charcoal, with my fire fading fast around hour ten. So, I had to finish it in the oven. Nevertheless, it turned out awesome. Moral of the story--Don't panic!

    Did 12lbs last week with the digi q. 14+hrs but that's when the temp controllers shine. Even then I was behind on time due for a party, the foil wrap 2 hours before the guests arrived pushed me through.

    Nice finish. I think I have done everything wrong you cans do with brisket, and it still turns out pretty dang good.

    Great results right there.  Way to stay after it and power thru.  Congrats on the cook and eats.
