Coconut Curry Chicken Soup

OT because it was done on the cooktop. Just didn't want to cook in the 13° windchill outside.
Sautéed shallots,carrots,garlic and red peppers. Then mixed in some green curry paste followed by curry powder, turmeric and coriander. Added chicken stock,coconut milk and Velveted chicken for a nice simmer then added 4 chopped green onions.
In a separate pan I blanched some spinach and snow peas followed by some Thai noodles.
Noodles,spinach and peas go in first and then covered with the curry soup with a lil cilantro and lime on top.

I'm not a big fan of curry myself, but it sure looks excellent my friend. Pics looks great as always too.

@Mattman3969 That looks great as always. Is green curry paste in the Asian food section?
Also I was thinking you need a sand pot from The Wok Shop. I don't know that they cook anything better but they are cool looking. As much as you enjoy Asian cooking you might get a kick out of one. I have one and enjoy it. It would be outstanding for this kind of cook.
