    Brother piney, if you want to do a double layer, I recommend using the mini tots. They will cook much better than the regular sized ones when double layered.

    Well low carb is lots of meat, so its not that bad. I do miss that bread and potatoes but you just eat more meat and cheese.

    @SGH, this was fantastic! Our extra cheese was mozzarella since we needed to use it up, but the next one will have cheddar cheese. This was so good, we're having leftovers with fried eggs this morning. Sides "in the style of Dixie" were Clemson Colossus crowder peas that we froze this summer, sliced tomatoes, and sliced cucumbers. Thanks for the recipe.

    Yep, it was a toss up between the Colossus peas and Christmas speckled butter beans. Hubby says this will be in regular rotation at our house. Thanks again.
