Yes. Catered 2 small party's today. Not a lot of money but gave me something to do with the cold weather.

carmalized the onion in the roux per @SGH

The gumbo looks awesome. I'm gonna have to make some now, but seafood's hard to come by around here. I usually go with chicken and sausage gumbo.Little Rock, AR

A little late, but when making shrimp stock, bake the shells in the oven first until they are just pink (about 5 minutes). Throw some fennel and orange peels in the stock as well.
