Just got a new Dutch oven for Christmas.
I need some ideas on what to cook on it first. My wife does not eat red meat and while that sounds awful, it has probably saved me from an early heart attack since I was a meat and potatoes guy and considered the potatoes as the vegetables.
I am thinking a chili or something like that but on the other hand, I might defy my wife and make a nice beef stew. Any recipes or recommendations are welcome.

Chili! Corn bread. Braised short ribs or pot roast. Carnitas. Man the options are limitless

You could do a brunswick stew with pork and/or pork and chicken. Here is one I did a while ago with the recipe and some modifications I made to scale it:

If you don't already have leftover smoked meat you could smoke a tenderloin and a chicken in an hour or so and then proceed to make stew.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
In thinking of doing a roasted chicken. My mom does amazing stewed chicken so I'm wondering if something similar to this would be good.
Throwing some onions, potatoes, carrots, and celery in the DO with some bacon fat and throwing the chicken on top and letting it cook for 90 mins to 2 hours. Then taking the drippings and making either a stew or some gravy. Either way, it all sounds delicious. -
