Brisket going on....
Found a choice 15 lb. packer at Wally World. Did a creole butter injection with a maple bacon rub. Wish me luck!

Just foil protect any of the brisket that is overhanging your heat deflector until shrinkage lets it go flat.
BTW- welcome aboard and enjoy the journey.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

I think it's anton who uses a rib rack to drape a long piece of meat over to get it within the shadow of the plate setter.

You need a larger egg for that massive brisket. Molly uses a foil covered brick to drape the brisket over to keep the meat out of the burn zone.
Any road will take you there if you don't know where you're going.

Hour 14 update...Egg held between 195-207 all night. Brisket is at 165F. Wrapping now and waiting for 200!
