SRF GOLD

12 hours into the cook, 225F pit, 250F dome 175F IT.  14.6 pound brisket, with little to almost zero trimmed, seasoned with my own rub, lightly smoked with a sherry-pecan-sugar maple blend. I will start probing at 185F IT. I really can't wait to PTC this brisket, allowing it to rest,, then serve when our folks from Texas arrive today. Should be fun!!

    Pulled, PTC for early lunch today. 187F IT, probed very, very easily. Snagged a piece off the grill, and it was delicious. The ends of the flat will be done as  burnt ends, everything else will be served up. This brisket had a massive point, should be awesome

    @YukonRon - way to bring it home.  You and your guests are in for a real banquet.  (I guess you have earned it after the double downer of football and b'ball ;) ).
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Don't forget to slice some of the ends on the point too.  Just don't sauce them or anything like that.
    Just a hack that makes some $hitty BBQ....

    Just got my SIL and her Husband to bed, a huge struggle, LOL, they came back down stairs for more  brisket. Looks like this will be a long night, they are the folks from Texas!!!!
    We started early with dates stuffed with Bleu cheese, wrapped in bacon, serving  a couple bottles of white burgundy, then I let them go to the cellar to pick the Reds for dinner. Big Mistake. LOL!!!! They slaughtered my Pinot Noir from France!!! The rest of the night was killer cabs.
