12 hours into the cook, 225F pit, 250F dome 175F IT. 14.6 pound brisket, with little to almost zero trimmed, seasoned with my own rub, lightly smoked with a sherry-pecan-sugar maple blend. I will start probing at 185F IT. I really can't wait to PTC this brisket, allowing it to rest,, then serve when our folks from Texas arrive today. Should be fun!!

Pulled, PTC for early lunch today. 187F IT, probed very, very easily. Snagged a piece off the grill, and it was delicious. The ends of the flat will be done as burnt ends, everything else will be served up. This brisket had a massive point, should be awesome"Knowledge is Good" - Emil Faber

@YukonRon - way to bring it home. You and your guests are in for a real banquet. (I guess you have earned it after the double downer of football and b'ball
). Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Don't forget to slice some of the ends on the point too. Just don't sauce them or anything like that.YukonRon said:Pulled, PTC for early lunch today. 187F IT, probed very, very easily. Bottom freakin' line........
Best Brisket They Ever Had In Their LIFE!
I screwed up every way you could possibly do this cook, and it still beat the SH!T out of anything they ever had!!!!!!!!
So Sorry for the late posting my friends! We all ate, went out back for a big fire, and finished the evening 12 bottles of wine, and quite a few more tastes of brisket, down!
This has now, as I have been told, an annual party, I have to host.
Breakfast burritos in the morning!

We started early with dates stuffed with Bleu cheese, wrapped in bacon, serving a couple bottles of white burgundy, then I let them go to the cellar to pick the Reds for dinner. Big Mistake. LOL!!!! They slaughtered my Pinot Noir from France!!! The rest of the night was killer cabs."Knowledge is Good" - Emil Faber

Damn Ron, "they came back down stairs for more brisket ". Love that!! The vino I know was very fine. What do you charge to cater?
. Off the hook bro! Congrats, you're guests were treated like royalty. Well done friend! Sandy Springs & Dawsonville Ga -
You are so kind. Thank you. As always, anyone makes the trip to my most humble of homes, will always be treated like family. We love the folks who visit, and MBW and I always feel blessed.
Catering, I don't know that I would be that great at it, but welcoming people in and sharing good food and good times at our home, is a blessing for us. Come bye, our welcome mat is always out."Knowledge is Good" - Emil Faber

Eggcelsior and I just had phone sex. He's actually pretty sensual if you get to know him. I'm wishing the best for his daughter right now.
