Beef short ribs at work! OT not on an egg

Brought a couple racks of beef ribs and my UDS up to work today to cook for our team.  We had a junk month last month and I wanted to boost everyone's spirit.  Came out great, but took WAY longer than usual. On at 9:30am, off at 4:15pm.












@SGH came by and hung out for a little but missed out on the finale.

    Yes sir, it looks like a missed a real treat. They were sure looking and smelling great when I left. Mighty fine looking ribs brother Grim. Wish I could have hung around longer my friend.

    The more of these I cook. The more often I see that one bone kick out the opposite direction. It always gets a big kick out of my guests.

    @SGHI guess we are the only ones that like beef ribs.  Or maybe my beef ribs have cooties because they were cooked in a trash can.

    Beef ribs are darn sure one of my favorites. Cooties or not, I would eat them. They smelled spectacular brother. I hated to leave but I had seafood in the truck that would have ruined. Speaking of cooking on a trash can, the best chicken that I have ever ate was cooked on a actuall galvanized garbage can by a real old black man in Moss Point in the late 70's. Nothing wrong with cooking on the cans my friend.

    Last week I took a brisket for lunch to the body shop I do the most work for. The owner of the dealership came walking through. He's  guy that has a electric cabinet smoker and probably doesn't know how to use it and he commented on me not making my own bbq sauce. Come on man.
