@dmw what size turkey is that? I wanted to spatchcock my15 pounder. Next year for sure. Did you go raised direct or indirect? I did it traditional for asthetics only.

Dry brined with a salt mixture for about 18 hrs. Coated under and over skin with a butter/rosemary mixture. Pecan/Apple chip mix. Raised direct and maintained at about 350 for 2 hrs...very easy and group consensus says it was best turkey they've ever had. 'Twas delicious

24lb bird cooked via Mad Max method. Only took 5 hours. I should have foiled a little sooner. The skin got a little dark. Tasted great, not bad for my first turkey on the egg.

to @theyolksonyou: what it that contraption you are using on your LBGE to hold that bird.
It appears to be some form of raised rack that is sitting on the normal 18" grid. Beneath the grid is your foil pan which is resting on... ? I cannot see.
Lastly, how many pounds was your bird?

Used my Maverick grid clip on the outside to keep the dome thermo off the bird -
Spatchcocked a 14 pounder yesterday afternoon. Tried Mickey's coffee rub for the first time after all the rave reviews. It was excellent - I took it to a potluck where there were 2 other turkeys. Mine received rave reviews. It took much less time than I had planned on - 70 minutes at 400 degrees. Pecan and cherry chunks with Fogo lump. Too easy!!

~17lb bird with my own homemade rub raised direct at 400 with a chunk of cherry for color. Every thanksgiving I ask myself why I don't do a turkey more often. Wings are the best part! -
