Late start on the Christmas Roast

Finally got off my behind and picked up a roast to age. I was up in NH cleaning my Dad's place (he's in FL for the winter). Pruned up my mother's apple tree, which I bought for her on Mother's day maybe 30 years ago, when I was in highschool. Mom passed away a couple years ago. 

I figured i'd save some chunks to use as smoke this year on the Christmas roast we do for the whole family. 



Heading Home I stopped at Market Basket, the family owned chain you might have heard aboutwhen the story went national where the customers went on strike to support the 'good' brother. 

Anyway, i asked about a choice rib roast, the whole seven bones in cryo. Guy said they had no choice, just Certified Angus Beef. The rib eye steaks in the case were 11.99 a pound. I asked how much if I bought the whole thing in cryo, as is. They said it would be 8.89 per pound. 

Done



I rinsed it and cleaned it up a bit





Then chunked off a four bone roast from the loin end. I took the knife down the side of the bone on the remaining end to make the roast as large as possible.


My wife put that in the beer fridge



Then carved off the three ribs from the large end, which are roasting slowly right now with a little oak. 


The remainder was cut into six boneless steaks. Four for tonight. 



Nothing special. But figured i'd post something. WTH


i normally age the whole thing (seven bones), but when my wife saw the CAB and how nice it looked, we hacked off tonight's dinner. I don't much care for the soggy fat in a fresh rib eye, but I'll manage I'm sure. Just have to power through.  ;)

    Partner, our definitions of what's special are drastically different. That's a fancy cut of meat and a special treat for sure. Thanks for posting.

    @SGH- took you long enough...he resurrected that a couple of days ago.  I think it was because some were trying to figure out who @Darby_Crenshaw may have been in a previous life.
    For those who are new here ( and most are) then it will take some time for the connection.  But if you are a raw meat and dry age kinda guy you may catch on in short order.  
    I suspect he may have been cruising around in a another alias as "Seneca the Younger" around 18 months or so ago but that poster didn't leave such revealing prints.  ;) 
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    stike is in the Witness Protection Program. He's had more names (and avatars) than Pablo Escobar. My personal favorite was Humphrey Chimpden Earwicker, though I never could appreciate Joyce myself. Cool name though. :)

    don't know Seneca, but i have been blamed for a lot of personalities over the years. Steven still Asks me every time someone knew joins the forum

    i don't do anything but change the name. I am not hiding pr pretending to be anyone. But for some readon it is a big mystery

    might have been more like 30 "or so" years

     BTW. I did a bad thing by hacking rhar seven bone subprimal in half. The flesh end where i cut it is going to dry too much. But i'll lop that off (and the heel end) and expect some loss. The damily wanted steaks tonight!

    Too bad "Seneca the Younger" left the forum. Definitely quality postings about more than the usual and I have not seen similar until @Darby_Crenshaw surfaced again.  Life goes on... ;)

  • Pre Thanksgiving steaks from the Christmas Roast on the left. Wife and the younger's on left with mine on top. Theirs are thinner, so when I pull them at the same time, they are medium and i'm midrare. My older boy has one that is still on the grill. Bigger than mine bit he likes it mid-well (teenagers aren't that bright). 



    The second I put them here the damn dog plunked under them. Sorry sh!tfer, but unless you can work a fork....

    i may just give him my steak. I'm gonna eat those three bones at right. Slow roasted for about four hours. 

    Looks good, but not as crispy as when you age it (or dry it actually). 



    Wife is lighting candles, she's so excited for this unplanned bonanza. 

    kids are ambivalent. Oldest just ate a giant bowl of ice cream. I'd be p!ssed bit I know it won't ruin his appetite

    Oh. Damn. I forgot how drippy and sooty these fresh ribeyes were. Holy hell. And the black smoke. Maybe the best reason to dry them. They simply sear, and cook in half the time that way. ;)

    I ate it with an artichoke and melted butter, plus a potato with sour cream. 

    Cholesterol level probably not too healthy at the moment

  • Wife was over the moon re the CAB. Have to say i can't imagine how much better it'll be in a month.

    I've never had a better steak than CAB. I prefer their brisket over all but snake river farms too. Say what you want but it's great product.

    We are on the same page-The "say what you want" was directed to people who say "it's just a brand" ( and it is, but it's a good one). The other one is good too, just a different distributor. When I see CAB, I get that over prime or anything else they have unless I see something really special.

  • Thanks guys. I may not get to take any pics at Christmas, but we've all seen a roast. Almost didn't take pics of the steaks as it is 

    @DMW does he like the taste, but maybe wants to switch it up? 

    @Jeremiah wife and the boys got the dog as a rescue. He's pretty old. They give him all sorts of attention, but he still sits under me all the time. Dining, living room, etc. drives them crazy.
