I have only tried apple...
but it I am curious too ... How can you really tell a difference among the fruit wood? -

Apple, cherry & pecan are my favorites and often I mix one of them with hickory.Re-gasketing the USA one yard at a time

stay away from mesquite altogether. hickory can be strong, but everything else plays nice together. just buy a bunch and experiment.

Thanks y'all I did a rack a beef spare ribs tonite with a hickory log and cherry CHIPS around the very outside of my lump just enough to burn some of the chips with out catching fire flavour was really good just a touch of sweet with the bold taste of beef with the hickory

A very open ended question. For pork, pecan, fruit woods and hickory. For beef, white or post oak. For pork belly, Apple and a light dose of hickory. For fish, alder wood. Just my likes. Pecan is what I use most. Experiment brother.Sandy Springs & Dawsonville Ga

Tho' its expensive, you can buy Jamaican pimenton wood online. More aromatic than any other smoke wood I've tried. I've had some sausages that were smoked in juniper wood, and they were very good. I've found that common red mulberry is quite good for poultry. Hope to get some grape vine this summer.

@Legume why do you stay away grime mesquite? I do like it when doing some southwest dishes....and even chicken. Mesquite tends to become off putting when used for long smokes. Not a problem for quick cook proteins.RRP said:

I use what's in my woodpile. Cut it with a chop saw. Super cheap works a charmColumbus, Ohio--A Gasser filled with Matchlight and an Ugly Drum.

What he said. Long smokes bad, just my opinion. I've cooked steaks over it and it's great - nice and hot for a fire, but really strong if you're accumulating smoke.pgprescott said:
