Rainy Saturday Brisket

First Saturday in a long time with nothing to do outside the house. Found this little guy at the butcher shop yesterday. Eight pounds pretrimmed. Not much of a point so I think we'll just slice and enjoy. Leftovers for chili.
Salt, pepper and a little smoked paprika.
Hickory and and cherry for smoke.
Now I think I'll have a prelunch beer while putting stuff back in the cabinets. Finally.

I also found out out shortly after starting this morning that we're on our own for lunch tomorrow . Usually eat at the in laws. May just let this thing ride, rest, and refrigerate until then....nah, I'll have to eat some. -

Delay in posting the final money shots may be attributed to:
1. Came out terrible. Dogs wouldn't even eat it.
2. Was so terrific the (inert cut - in this case brisket) was devoured faster than I could whip my camera out.
3. Somewhere between 1 and 2.

The cooking while asleep is the easy part. Where the Gods prevail is somehow knowing when to stop the cooking. That expertise has me buffaloed on Sunday AM and every other day of the week.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Well it's not number 2.
When I figured it wasn't going to be ready for supper I slowed it down so we could go out. So it was after midnight before it came off. I was somewhat inebriated after beer all day and margaritas and, ok, some whiskey. I set an alarm, incorrectly, but did wake up and take it off before it got too far down the road.
I had had a slice last night at 1ish and it seemed dry, but so was my mouth.
Gonna make sandwiches at lunch, we shall see. -
