Stuffed Tomatoes - not your Mama's veggies

@VANcouverEGG did some stuffed tomatoes, inspiring me to try my own version.
No recipe, but inside is some of what I call creamed spinach (spinach reduced in some olive oil and butter - then add cream cheese, garlic, and of course BACON) Topped with mozzarella cheese and then some panko breadcrumbs for some texture.
I cooked it medium heat in an enameled CI skillet for 15 minutes and then another 15 after rotating.
It sure tasted better than regular veggies, so thought I'd share.

Looks great. A buddy turned me on to something similar, he douses the maters with Italian dressing first. The flavor pairs amazingly well. Thanks for the post, great looking and healthy meal.

Thanks for the inspiration- 40 day dry aged ribeye, stuffed tomatoes, and tater tots
stuffed the the tomatoes with Panko, feta, bacon, and topped with parmigiana. Cooked for about 20 minutes at 375-400 but was probably 5 minutes too long. They exploded but the taste was amazing. I also soaked the cut tomatoes in Italian dressing for 2 hrs.Greensboro, NC -
