    I think the Polish have already beaten you to it.  Look up "smalec"  It's basically delicious lard with crispy bacon chunks in it.  They spread it on white bread and drink super strength beer with it.

    this might be what your looking for, ive made it before, called gorton, pronounced cahh-ton, in canada its cretons. spread on white bread with a little mustard, good stuff. place near me sells several homemade gallons a day. basically half pork butt, half pork fat, salt,pepper,cloves,water and boil it down all day. was thinking last time to add red dye so it looked as good as a good spam spread =)
