Recent Demo Cooks.

Dehydrated pineapple wrapped in bacon & halved fresh figs wrapped in bacon both with Garden's BBQ Rub.


Quesadillas with Mexican Blend shredded cheese and @MeatChurch Honey Hog Hot.



Blueberry Crisp.

And Back Home.
Beef Back Ribs with Very Coarse Kosher and fresh cracked pepper. RW and Oak for smoke. Went roughly 8 hrs till they probed like buttuh.




Hatch Chile Burgers with sauteed onion, bacon, melted shredded Jack cheese and a whole Hatch Chile atop on a fresh sliced bun.







Have yet to slice it. I'll post sliced and plated shots later. Thanks for looking. Happy Labor Day!

Dang-I can barely keep my mind around one cook on one BGE. Most eggcellent as expected. Multiple home-runs right there. Congrats- you likely have acquired a fan club; enjoy!Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Plate ribs I believe are on the same lines as Short Ribs (maybe). These were Real Thick Meaty Beef Back Ribs about 23# worth from RD. Prep was simple....very thin rub of Dukes Mayonnaise with one shallot minced and blended for a binder. Then a a sprinkle of a kosher salt I've really fell in love with especially on beef (Alessi Coarse Mediterranean Kosher Salt) and fresh heavy fresh ground cracked pepper. Pit with RW and 3 good sized chunks of Oak and ran at about 235℉-275℉ uncovered (not wrapped) the entire cook until they probed like buttuh. I'm a huge fan of any and all beef ribs...much more so than pork.

@TTC for clarification I did dehydrated pineapple with bacon wrap and a rub for one App. And a fresh a 2nd App with fresh halved figs wrapped in bacon with a rub. Yes, Rockwood lump charcoal. It has a nice neutral burn and from my experience does well on most cooks. Now that I think about it RW isn't available in CA. In that case I'd probably use WGWW or WGJB (Wicked Good Weekend Warrior or Wicked Good Jake's Blend) both have good burn time, low ash and fairly neutral. Definitely indirect. One set was at regular height and the other 2 were raised indirect. @eggsurance_agent Thanks! Yes just dusted the cheese and ran with it. I didn't have any anymore Fajita rub and the Honey Hog Hot works well with a lot of things so I winged it. They turned out crisp yet internally were soft and good. I made a total of 20 and sliced them up with the pizza rocker to taste tester size with toothpicks.
