Hell yes, this is absolutely the best way. I have done these pan fried, on the egg, on the Blackstone and last was my R&V outdoor fryer.

Working on how to do them at Eggfests and get the crispness from the deep fryer.

I may have to call @Village Idiot and get pointers on doing these on the Large with a Wok.

I watched @The Cen-Tex Smoker and @TFJ with a wok at Salado a few years ago.  Vat of oil over open flame in a crowd seems a bit adventurous to me (and this is ME we're talking about).
