Kind of behind the eightball on this, and I thought it may provide some knowledge and entertainment as well for us all.
What is your favorite "GO TO" recipe for appetizers on the grill? Winner gets beer, or some other beverage when we meet.
Found out we (when the word we shows up it means I in wife speak) are cooking for a dinner party tomorrow night, and we (I) got no clue.

Soak some asparagus in olive oil and herbs for a few hours. Cook it indirect or direct raised at about 400 or so. Take it off while it's still crisp inside. Great easy finger food.

Dates stuffed with goat cheese andcwrapped in bacon are hard to beat. Hell, my favorite is probably banana peppers stuffed with pulled pork snd cream cheese and wrapped in bacon.

My wife and I are suckers for stuffed portobello mushrooms. The last time I made them I cooked the stems along with some bacon, garlic, and onions in bacon fat. I cooled it all down and then mixed it with my favorite rub, some paprika, and a package of cream cheese. After I stuffed the caps I dusted again with rub. By far the best I have made. I'm into ABTs at the moment, stuffed with a blend of cream cheese and a buffalo sauce infused cheese I found at Wegmans, then blended with diced chorizo. So many great spicy flavors and textures coming together.Always seeking the high I experienced from my first true BBQ experience.

I'm trying bacon wrapped figs stuffed with goat cheese and honey on Saturday night, but lately, I've been stuffing Costco Baby Bellas with Pimento cheese, dusting with black pepper and chile powder and sautéing in cast iron at 450 ish till the look done. Unbelievable. Wife swears by them. And Fresh Market Crab dip makes a nice stuffing too.

Cedar planked baked Brie with cartelized onions. Slice a baguette and bam you are good to go.

I'm always partial to Pig Shots. They're a bit of a pain prep wise but super tasty and always a hit. I'd go that route or ABT's.

There's a strong bacon theme in the apps category, no accident there.
I like grilling stuffed mushrooms, you can do a variety of stuffings and they take little attention once on the grill. Probably my favorite is stuffed with cream cheese/blue cheese mixture along with a healthy dose of pepper jelly and topped with prosciutto. They always turn out great.Love you bro! -

On the dip front, I make a Chicken Enchilada dip that I roast the chicken first (BGE obviously), shred and assemble other ingredients (cream cheese, cheddar cheese, roasted green chili's, green onions, garlic, several herbs, spices and avocado.......load up into a CI casserole....back on the Egg for 30 min or so. If there is interest....happy to post it or reach out to me direct. Oh and Nabisco (i think) makes a southwestern cracker now that is excellent with it as well.Ellijay GA with a Medium & MiniMax
