    The 4 phases of catering:

    1)- 3 months before the event: "Hell yeah I can do that. How much? Boooyah- gonna make that money"!

    2) Day of event:  "what the hell did I sign up for....who is going to clean all this **** up? I'm so tired, god I need a nap". 

    3) Night/Morning after event in bed:" I don't care how much they pay me, I am NEVER doing this again"

    4) 2 weeks after last event: "Hell yeah I can do that! How much? Boooyah- gonna make that money!

    Repeat

    That is pretty accurate man!  I crushed it and have been asked to do a quinceanera, a graduation in June and a reunion.  Several asked the host who catered and wanted my card (which I don't have yet).  I'm highly unmotivated to do any of them at the moment as they're all over hundred and 200 miles away.  Maybe I'll be ready in 2 weeks after I recover.  Cambros worked excellent but it is just so damn much to load.  5 of the 6 briskest were awesome...for some reason one was a lil dry, even not that great point.

    I learned a few things and had 1 huge failure.  I don't know what happened but I lost a big batch of beans.  Something happened and it developed a horrible taste within a few minutes.  Oh well, I still made my corn corn salad and a vinegar slaw which all sold out. 

    Feedback was great and got some silly comparisons to Franklins which I don't agree with.  The host particularly like my beef rib more than theirs as she said it was way more tender.  Which is crazy cause they were on the verge of being overdone.  I guess I need to overdo them more as they were tender and still held the bone.

    1 thing I hated is at the last minute, they changed the way the line ran and we just made plates and someone expedited.  I wasn't a fan of that as I had no customer interaction.  Thankfully most came back to compliment me.  The brined sous vide turkey was fvcking bananas.  I don't think I'll make a turkey breast another way.

    We're staying at TPC tonight so I may fall asleep on their lazy river tomorrow!

    Edit: the not so good brisky could be chalked up to the meat...not necessarily your failure but, you already know that does happen seldom but, it can happen. Glad it all worked out for you buddy.

    It's tough man...I had 3 different brands of prime brisket and you just don't know until it's too late.

    Glad that it was a success. If you are still interested in a tank since we last spoke, there is a 1,000 gallon for sale on eBay for 989.00 bucks. Says it's half full of gas. If that's the case, the gas alone would cost that much. The tank looks to be in excellent shape. No rust at all. Again, congratulations.

  • Great job caz. That is badass work right there. I ate at Louie Muellers today and it sucked. I'm sure I would have much rather eaten BBQ by Cazzy. I did get a kick ass hat though. 

    I have have a pretty good idea which brisket didn't turn out. I'll talk to you when you resurface. Get some sleep.

    Yeah, they definitely screwed that up!

    Thanks!!  Wish I had some pics but there just wasn't time.  I have a couple more to post of the ribs, but I'll do that later when I charge my phone.
