Tri-Tip
I called my local grocer and asked if the had Tri-tip. I was told that they did and would set one aside for me. When I got there she handed me something marked "Choice Beef Round Tip Roast, Cap Off". I thought the Tri-Tip came from the sirloin. I cooked it at 250 to an internal temp of 130 then seared it. It has good flavor but is pretty tough. I'm having a tough time finding Tri-Tip or Flat Iron steak here in the Fort Worth area. Any one know of a good source of tri-tip and flat iron steak in the Fort Worth area?

Not in NOLA, unfortunately, but my local grocer has been cutting a few since I started requesting them.

Was reading the cook's thesaurus and a round tip=sirloin tip in some areas. The substitute was listed as a tri-tip. For cooking they may be similar, but for a butcher, they are no way near the same.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

The tri tip is listed as NAMP 185D. You might try to have your butcher look that up to get the correct cut. In some areas it is called a Santa Maria Roast.A poor widows son.

Be aware costco needles their tri tip and recommends 160 as internal temp. I would look at Sam's Club for tri tip.

My suggestion is to buy one at a meat shop. The prices might be a bit higher, but you will get better quality meat.
