Not something I've really talked about, but as of late, I'm doing a little catering on the side.  I'm preparing for a graduation party for 150...and am doing a lot of brisket and other proteins.  This will be a true test as it's a UT graduation and most love them some Franklin Barbecue.  

Anyway, I have to transport 3 briskets, 2 butts and sausage for a party this weekend, so this is my traveling kit.  For the UT party on the 30th, I'll have 4 of these loaded with Cazzy's Cue (haha JIC)!!

    Buddy please talk us thru how you do this. What is heated back up to transport etc...
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    Dear lord, does @cazzy catering make it about 1000 miles north?
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    The goal is to not heat anything up.  For the big cook...I'll cook all the briskets first, hold them in my oven on warm, then load everything up when the rest comes off.

    I held one brisket in my oven for 8 hours and didn't lose any quality.  It was this brisket:

    We use several of these stacked up.  Preheat them before meat goes in by setting a pot of hot water in them for 15 minutes. Also good for cold storage with a tray of ice in the top tray.

    We use several of these stacked up.  Preheat them before meat goes in by setting a pot of hot water in them for 15 minutes. Also good for cold storage with a tray of ice in the top tray.

    Caz does it have heating/warming capabilities? I can't tell by the pic. The reason that I ask is if it doesn't, you can preheat with a hair dryer pretty fast. Nice set up man.

    No...it is a non powered insulated holding cabinet.  At some point, a may need to get a CVap or some type of powered cabinet if I out grow my oven.

    @cazzy - Nice man. Good luck on the catering adventure. My fiancee and I are mulling over a larger smoker and maybe a lil catering too. Its really up to me but I ask her a ton of questions and she listens most of the time i think. Maybe she tunes me out. LOL

    Have you considered adding a trailer to your smoker?

    My cousin owns a couple of restaurants and does a hefty catering business and uses Carlisle End loaders. He loves them.  That's a pretty cool gig.  Good luck.  Do you send sauce?  Make yourself?

    Loaded up and on my way to Beeville.  I plan to probe everything right before service.  It will work out to a 4 hour hold...

    That looks like a winner.  You said that you held a brisket in the oven for several hours...Was the oven on or just used a a big thermal unit?

    The oven was on warm set to 145. Worked like a champ for 8 hours...Highly recommend.  These were held in the oven at 170 since I need them above serving temps during my drive.
