I think it's the ability to mix the right amount smoke and fire with a piece of meat that just melts in ones mouth with out the sauce.I do like a good sauce.depending on my taste buds, today it might be a good red pepper and vinager mix and other times it might be a good mustard base sauce.after saying that, it's the meat that makes the sauce.

+1 @luckeyboy.  Good bbq needs no sauce, although sauce is not irrelevant.  Saucing ribs is routine, sometimes chicken, otherwise rarely.

I'm sure he's had a photo-op there, just like O.  Probably had it delivered a few times as well.  I don't think he was plugging Franklins, he was name dropping to establish his BBQ cred.
