SRF Crown Rib Roast

found this in the freezer that I forgot about. Seasoned with smokin guns hot,big papa smokers jallelujah, and big papa smokers money. Dome 250 with Apple and cherry wood for smoke.

    Awesome brother. I always try to do one on Thanksgiving. A real crowd pleaser for sure. I noticed that you didn't tie your ends. May I ask why? Just curious.

    LoL yeah I bought a few of them and then bought a half of a buffalo and it got kinda lost underneath everything. Found a Brisket too.
    @sgh that is how SRF ships them. Pretty easy for sure.

    I ask because I like mine on the slightly rare side. I usually pull somewhere in the 135 internal arena.

    @sgh this is a pork rib crown roast. No way I'm pulling pork that low. Just not brave enough for that.

    I know exactly what it is. We cook them a few times a year. I wasn't suggesting that you pull yours that early, just stating that is how I personally prefer them. My wife however prefers them cooked to a much higher temp. That is why I asked above what temp you was going to.

    @sgh tasted great according to the mrs and even the 11 yr old boy liked it. I have a cold right now so I could to really taste anything, but it was nice and moist.

    I'm with @SGH on pork.  I usually cook my tenderloins and chops to 140.  I would have thought the same for the crown.

    What is the "feel" you look for on those crowns?

    I would rather light a candle than curse your darkness.

    @ozzie-Isaac I got to admit I wanted to pull it a little sooner but got farting around in the garage. With the SRF crown there is some good fat all thru it that overshooting is ok they still seem to come out moist.
