Again my apologies for those that saw my post yesterday ....moving forward ...Ordered my Stoker fro a rocks yesterday , had a couple of questions after the order that he personally answered, great service!..though orders are slow right now, I'll be patient ....coked for years without one, now I have to have it...thanks @NPHuskerFL for all your input...can this be used even without the fan if you still want to manually control, but accurately monitor....

I've never personal tried it but I don't see why you couldn't....

I've had mine for two weeks used it for four cooks so far and have loved it.

...of course.  You wouldn't even need to plug the fan in in this scenario.  The Stoker senses what probes are attached as it powers up.  Congratulations on your purchase.

Thanks @mahenryak ...glad to hear @Scottborasjr ...I really have no issues with Manual control, but love the wifi and that I can sit in a bar and monitor.....I think now in stead of getting up throughout the night for no reason only to always find my temp spot on.....now I'll be getting up all night to make sure the fan is working :o

I really didn't have any problems with manual control either but it sure was nice to keep an eye on a brisket while at work. Couldn't be happier

Yes you could do that. Just leave the draft induced blower disconnected.   Also remember you can use the Stoker up to 400℉ (personally I only use it for L&S though) but, remember to shield the silicone covered cables with something like the PS leg to protect it from direct radiant heat (that per Rock's). Enjoy brotha.

Of course our Eggs hold temp great, and control is never an issue, This Stoker takes it to another level, temperature sits like a rock wherever you set it, much easier to control lower temp range...stated this at 250 grid, lowered it to 220 for the finish, stays within a degree
