No pics so it didn't happen but I just drank some Aaron Franklin Kool-Aid.  Spent a few minutes talking Q with him at his place in Austin.  Same person as you see in the videos.  And he did say he enjoys Valentina's. 
Headed to Dallas (via La Barbeque) now-btw his favorite place to eat in Dallas is Luscher's Red Hots.

Just came home from my daughters High School Orchestra winter concert.  Sounded very, very, good.

Found this today for ten bucks, had to bring it home.  The bamboo picks from the Asian store are awesome, much stronger than the regular ones.  They come in handy for rib cooks, and getting the egg to separate from the egg rings.  

Nice to have some on display within arms reach.  Will take a black Sharpie, color in the stitches for the eyes and mouth, maybe personalize it.

Only two dinky "Moline" roasts left.
Dude was cool, opened a new box.
Had to grab the biggest one, a 20lber...go Fockin' big, or go Fockin' home.

Plan is to wet age 2 wks, dry 4.
Chunk off a roast for the rotis on the b-day, slice some paper thin for open faced Phillys with house bread, topped with a provolone bechamel, stir fryed ernyins and peppers...then steak and FS whatever is left.

Figured I would make it an even $200 with a sweet range case.

Just grabbed another beer from the fridge to finish up Sunday Night Football and snapped a shot of some rotting meat. Boneless ribeye, 11 days in.


Serving this on Saturday, so will only be 17 days. Not much in the way of aging, but a decent amount of drying.
