@Jeremiah - another option is to foil the thin end of the flat if you don't feel like you have the bark you want. From here it looks great so your call. BTW-I start out any packer cook with the thin part of the flat foil protected for the first few hours in a feeble attempt to get it across the finish-line with the rest of the cut. Sometimes it works-but it does reduce the drying out that seems to accompany it if nekked for the duration. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Thanks to all for the kindness offered, regarding the recent events with my MIL.
They decided not to wit ny longer nd performed two " by the textbook" surgeries last night. She came through both fairly well, and her kidney function is back to normal. Sepsis is still the main worry, and she is on fluids and antibiotics for another two weeks. She is not out of the woods just yet, but with some good fortune, she will be.
We were originally planning to attend a wedding celebration last night, and provide a brisket. The brisket made it, but we did not. I started it at 2 a.m., delivered it at 5:30, in between trips back and forth to the hospital.
The annual shrimp boil is still on as of now, and I have asked my BIL to increase the amount of shrimp, last count on the RSVP was 65, and that number looks to grow. This event has become a living thing, and would likely still occur even if we were dead.
So far, due to things way out of our control, the Kitchen will not be finished in time for the party. The wine refridgerator was messed up, and we will not get it until the 8th. Plus we still need dome electrical done, and touch ups, etc.
Just gives us another excuse to have another social event when and uf it ever gets finished.

@YukonRon- you are soldiering on with great professionalism and class. You would not know of your family's adversity had you not brought it up. Remarkable strength under the conditions. And right now that is what all are leaning on. I know you will stay strong and positive as that is the way you operate. I'm sure those traits are appreciated much more than you will ever know.
Family first-and don't burn yourself out. Too many relying on you. Thoughts and prayers to you, your MIL, your Beautiful wife and your family.
BTW-on a lighter note-I have obviously led a sheltered life-never been to a shrimp boil that was fired up in a kitchen so its absence is "no worries". He said "Great! See you at 8:00, and be ready" then he hung up the phone.
He showed up at 7:45 and said "out of my way". Bless him. Here he is at 84 and standing on the top of a 3 step ladder on an uneven slope getting started.
If I am lucky, he will let me drive a few screws when the time is right.....
