    @Jeremiah -  another option is to foil the thin end of the flat if you don't feel like you have the bark you want.  From here it looks great so your call.  BTW-I start out any packer cook with the thin part of the flat foil protected for the first few hours in a feeble attempt to get it across the finish-line with the rest of the cut.  Sometimes it works-but it does reduce the drying out that seems to accompany it if nekked for the duration.  FWIW-

    @YukonRon-  you are soldiering on with great professionalism and class.  You would not know of your family's adversity had you not brought it up.  Remarkable strength under the conditions.  And right now that is what all are leaning on.  I know you will stay strong and positive as that is the way you operate.  I'm sure those traits are appreciated much more than you will ever know.  
    Family first-and don't burn yourself out.  Too many relying on you.  Thoughts and prayers to you, your MIL, your Beautiful wife and your family.  

    BTW-on a lighter note-I have obviously led a sheltered life-never been to a shrimp boil that was fired up in a kitchen so its absence is "no worries". But if you decide to go down that road I'm sure it would be epic.

    Just got back from helping a co-worker gut all the crap out of her flooded house in Sorrento.  She lost about 30 chickens and every thing she owned.

    @lousubcap thanks for the tips. I ended up letting it ride for another 45 minutes or so and its in paper in a cooler. Smells incredible!!!

    Made some Indian dish the wife wanted. Turned out good.
