    @bgebrent -  You have got to give this cook approach a go.  @hapster is the one who convinced me to go down this road and I have never looked back.  Depending on the size of your BGE will dictate the length of the tongs you need to do the flip work but I find it works quite well with any beef steak cut of around 1 1/2" or less in thickness.  Much greater than that can be problematic unless you have an extremely level and wide bed of coals.   But I likely have not mastered the intricacies or nuances of the cook.  FWIW-
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Brother, I've done many a ribeye and porterhouse caveman style and could not agree with you more!!  I truly appreciate your experienced insight.  For me, it's about the tri-tip with which I have no experience.  Based on your comments and Blakes cook, I'll go caveman and shoot for MR.  Let me know if I need modifications and thanks for your input!  I have a L and an XL.  All my caveman cooks have been on the L.

    Dang- as a survivor (or better?) of NCBB and with the BGE's in your arsenal and no doubt a trusty thermo-pen at your side-go baby, go.  ;)  
    For the record, I have no eggsperience with Tri-Tip but as you well know this whole thing is pretty much about heat transfer and fire physics.

    Put some ribs on when we went to the pool. Made some Mac and cheese with a rack of ribs with cold smoked cannot white cheddar and about to throw some rolls in for rib sandwiches. And I am pretty sober.

    @gamecockeggman was just kidding about the sober. One neighbor is coming over after the braves game and the other was at the pool with us and is coming over after their anniversary dinner. We are gonna play margarita pong.  About 19 or so beers deep right now.

    @bgebrent Went reverse sear and caveman finish on mine. I seared the 2nd one on the CI grid. Turned out damn good. However, I prefer a Cap of Ribeye, Ribeye, NYS. These marinated a few hours. This is only the 3rd or 4th time I've done these.
