  • Greensboro NC, temps are going to be sunny in the mid 60's.. So I am planning all my cooks... Saturday: Prime rib roast, sides to be determined.. Sunday: Baby back pork ribs, Kielbasa's wrapped in bacon, Thick cut slices of belly pork rashers, maybe some slaw and a salad.. The only down time for my Egg will be for adding lump.. Everyone have a fantastic weekend..
     
    Thinking I'll run to the processor and grab some steaks for tonight. If I'm lucky they'll have some beef ribs that will be consumed Sunday. Maybe oysters for Saturday if I can find em. 
    Thanks for the feeling of not have my **** together.  I hadn't thought about what to cook at all yet.

    I'm going to John Mitchell's house.  I'll bring the maters.
    Well this all went pear shaped in a hurry... With one call from the missus I was informed that she HAD told me we had plans for both Sat and Sun.. I might have to pull out the man card on this one.. By the way Matt you are always welcome...

    @johnmitchell - "Better to be lucky than good any day" comes to mind.  Doesn't matter how you got there-looks like a great cook with eats to follow.  Enjoy and cook something for the posse down the road.

    I prefer skirts over all other cuts for fajitas. Plus, they are the traditional cut used, anyway.

    I hope they are as good as the flat irons. I know they are traditional, as is cutting them up and cooking them. I leave the proteins whole and cook them separate from the veg. F tradition. They look pretty good though. Might be even better. We'll see.

  • Well, it's steak tonight, but I've spent the day at the ER with my dad. Low sodium is no joke. He's back at home resting with restricted liquid intake of 1L/day. Crappie way to spend a Sat, but thankful it wasn't a stroke.

    @theyolksonyou - no doc here but good that you are out of the medical community influence.  Given the quick turnaround (an eternity in your eyes) it sounds like your dad is on the big plus side.  Celebrate that fact.

    Spent the day installing Christmas gifts... indoor stereo receiver with new hdmi cables and speaker connectors. A receiver for the Lanai with a couple new outdoor speakers and new Klipsch bass speaker. Set-up new key fobs for my truck and keyfinder linked to app. 
    And just got home from grocery shopping for throwdown goodies. Enjoying an ice cold I-10 IPA now. Busy productive day.

    The Klipsch clarity and crossover with gain is spot on but, I'm getting some miniscule interference due to the close proximity of receiver to speaker so my wife ordered a new 15' speaker cable. Hopefully that does the trick. I had a Velodyne Servo bass speaker that bit the dust after 21 yrs of usage.

    Thinking about my next cook.  I'm in a bit of a rut.  Really want to step up my game.

    I really struggle with sides.  Need to make a cohesive meal.

    I feel you there. I feel like i routinely crush the protein, but am left wanting by lackluster sides.

    Learn how to make bread.  Actually, learn how to make, work on it continuously, a dozen sides.  Stick to them, refine them, and you'll be a food flarkin' god, given you got the protein nailed.
