Got caught up with chores and failed to make a suitable dinner. So I used this as an opportunity to work on my 2020 fried chicken game using chicken skin, wagyu tallow and char siu beef bacon grease. My house legit smells like Popeye's right now.
It's "Smokin Gal", not "Smoking Al".

Another round of pork jerky. I wasn't happy with the marinade I used the last time. It worked with beef but not so much pork.
JohnInCarolina sent me a link to try out for the pork marinade. I'm looking forward to see how it turns out.

Last night's Chicken Teriyaki... seared the thighs on my Lodge pizza stone sitting on top of my gas grill grates, then finished over the stock grates. Then glazed with Teriyaki and back on the grates to caramelize.

The key is to just let it reduce low 'n slow on the stove top. Don't stop reducing until it's thick and creamy and leaves a trail in the bottom of the pan when you run a spatula through it. Definitely don't want it soupy.
