Stuffing a couple pork tenderloins Cuban style with lotsa bacon.

Both ready rubbed with pork U. The trimming I put a spoon of bacon fat and hit with meat church bacon and honey hog hot.

Enjoying my new favorite Brie.
Consumer Reports just did a taste test of "supermarket Brie cheese". This was the only "Highly Recommended" brand, made in France:
I wrote it, and the 3 "Recommended" brands down ("Recommended with Reservations" included Alouette and Joan of Arc, which is what I normally get). Too often the "Highly Recommended" brands aren't available here in white-bread utard; sometimes I can order something from Amazon Prime but brie wasn't a good candidate. Was very happy, my local cheese kiosk had the d'Affinois!
It was very soft and sagged in the package, so I (luckily) laid it in a bowl to come to room temperature. This is good; nutty, wonderful texture (although the rind was a bit stiff, may have been old) and just enough "barnyard funk" to keep it interesting. Yum!

Thanks brother and glad that you like the knife. It's a great "all around use" knife. I leave it on the counter at all times for my wife to use as a kitchen knife. I like it for trim work and steaking out large fish. You can make the cut with one pull instead of having to saw back and forth. The knife gets used several times daily.

I am reminded about why the SBGE is such a hacker. Ten hours in with a 6 lb pork butt and just cruising along. Now at 300 *F on the dome to punch it home.

One done. I had an extra pizza crust I needed to use up so I pulled the 2nd one at 130 and wrapped it like a Wellington with butter and Parmesan on the crust.

The dough wrapped tenderloin with butter and Parmesan is amazing. One of the better drinking ideas I have had recently.

Spent yesterday working on the boat and today fishing in Hopedale Lagoon and that general area.
Tonight cooked a kickass dinner. Coffee/soy marinated chicken thighs, Asian marinated thick center cut pork chops, bacon vinegar curry cabbage, mashed taters.
Probably got 8 hours of sleep over the last two days....fading fast. Geaux Saints!
