After seeing @henapple post about this or something like this a few days ago, I knew I wanted to give it a shot.
Made some zucchini pasta sautéed in oil with some garlic and prosciutto, topped with some lemon juice and grated pecorino Romano cheese
It was pretty good and I'll be trying stuff like this again. The chicken was grilled on Sunday just for using it during the week...

I got my spiralizer at William Sonoma. I have done the zucchini, squash, beets, butternut squash, onions, peppers and apples so far and I love it. ;;)Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

This is the one I bought. It didn't come with the book or cds though. http://www.amazon.com/gp/product/B00KHD7NAA/ref=oh_aui_detailpage_o00_s00?ie=UTF8&psc=1 @Griffin When I cook them I heat up some olive oil and garlic and just throw them in the pan for a few minutes. A little tip is to slice them up into a colander and throw some salt on them. They are full of water and want to try and get some of that out before going into the pan other wise you will have a pool of water in there.As far as other things I've done, I have only done zucchini. I just have been trying different sautes and protein/veggies with them.Large and Small BGECentral, IL

@Griffin The key is don't over cook. Let them stay a little crunchy or they are a mushy tasteless mess.
