Just to be candid. This cook is really not that difficult. No more so that say lollipops, stuffed loin, stuffed and bacon wrapped meatloaf, brisket. The prep is what seems to intimidate people. Give it a shot. I've only done like maybe 3 to 5 of these. And frankly it's been at least 6 months since my last one. I hope we get some participation. Don't give the work excuse. I think this is entirely worth the work, particularly with game hens. No bones to fool with when you're eating, wonderful flavoring from filling, and it's just plain gorgeous. And you guys go through some elaborate prep for your cooks; this is no more time consuming. Another bonus: It cooks quicker than a bone-in chicken.The amount of stuffing: 2 cups is quite a bit. Count me out. I would try, but I will be working far too much. Overnight trip tonight/tomorrow. Normal day is 0600-2300 for me, 7 days a week. I am going to try to squeeze in some wings on Sunday if I can get off early somehow.

@jlsm you're right - when it's time to eat, just slice, no carving around the bones, so you get back some of the time invested in deboning it.
maybe we should also offer a prize to the last place finisher, to encourage people to enter?
looking forward to this.... mine may turn out a total mess but it's going to be fun to do.

Okay....I'm in the game. It's on the egg as we speak(write). Sure hope I don't get sick. It hung out in the danger zone way too long for me while I was trying to figure the deboning thing out. Cooking to 165° and then pulling. No guessing on the rise during rest time.Steven

It took me about 45 min again to de-bone my chicken. I suck at this. I accidentally cut the skin along the back and breast so I had to use up the rest of my meat glue I'll cook it tomorrow and post my entry.In Manchester, TNVol For Life!

This was a challenge for me. I think it took me about 45 minutes too. I went through a million pair of nitrile gloves. I would of just used bare hands, but it was a lot easier to just take a glove off to stop/start the iPad as opposed to washing and messing with iPad.
For those of you that haven't started yet and plan to use the video as a guide, I'd recommend having somebody standing by to start and pause the video.Steven

OK, I'll ask the question. Are you actually de-boning the chicken or are you really boning the chicken? No innuendo meant (and no in-you-end-doe meant) Just curious what the proper term is. I believe everyone is actually boning the chicken.

That's a personal question. If your pulling a bone out, it's deboning. It would be boning if you were putting the bones in. That's how I see it anyway.Steven

Are you using a boning knife or a de-boning knife? I've never seen a de-boning knife advertised.
