Meatloaf, shmeatloaf, I hate meatloaf

Except this meatloaf was really good.

Ground beef, chorizo, spinach and onions in a bacon weave. Cooked indirect at 410 ish over rockwood with 2 small pecan chunks and a handful of cherry chips. Plated with sweet potatoes cooked on the egg and cauliflower biscuits and ,of course, a fork. Finished IT 160. Thanks for lookin.

Edit: sauced with chipotle mayo with 5 min left and on the plate.

    @DMW‌ @Mattman3969‌ @Roadpuke0‌ here you go. We used fresh head and shredded also play with add ons. We added cheese for the kids and they dip in ranch. You could really do whatever you wanted here. Use your imaginations and hit me back! These were from the kitchen clock, but could easily be off the egg. I just didn't have room.

    @johnkitchens‌ there was a pound of ground beef and about a pound of chorizo, a half onion sautéed and about 2 cups of chopped spinach, half cup almond flour as a binder. Took about an hour to get to 160. There's 4 of us and we had one slice about 1" thick left.

    Are you sure that's a meat loaf?  You might have stretched my imagination right over the edge with this cook ... and my cholesterol.  It does look good and very creative, but I'll just take a second helping of the sweet potato, if you don't mind.

    How long for a sweet potato at about 375 degrees?  Those are now on the to-do list.  Just olive oil coating?

    @Jeepster47‌ honestly, those are lazy man's sweet potatoes. I put them on the back of the egg while the meatloaf cooked. They were naked just stuck them on the back of the pizza pan the meat was on. They were on for about an hour at 415 or so and I had to finish the bigger one in the micro.

    we do coat with EVOO and sea salt when we make sweet potacos. That is a baked sweet potato gutted and then roast the coated skin, then fill with whatever you like on a taco. Sounds nasty, tastes great.

    I think when I try it I use about 6 pounds of beef. I am going big.

    @theyolksonyou ... thanks for the tater feedback.

    I just reread my earlier post ... didn't quite get it right.  I love spicy, greasy, etc foods, but my stomach doesn't.  And, it's a mean ornery stomach, so I try very hard not to offend it.  Your cook looks great to me ... not to my constitution.

    @Jeepster47‌ no worries my friend. If we were all the same the world would be incredibly boring! I really don't like traditional meatloaf, even if I was spoofing a movie with my title. My wife loves meatloaf so she is happy we found one we both liked.

    I've been putting spinach in my meatloaf for years.  Adds moisture and makes me strong like Popeye.  OK, well it does add moisture.

    That recipe looks good except for one ingredient that turns it into
    "My Evil Step Mom's Crappy Meatloaf!"
    I hate the taste of green ickies.  Both my sister and I hate all things flavored with green ickies.
    Our evil step-mom put them in almost everything, meatloaf, hamburger patties, spaghetti sauce, etc.  When I was in the military, sometimes a lone green ickie would fall into the omelette I was getting.  I could be taking a bite 2 inches away from it's location and I would know that disgusting piece of green icky was there.

    Now substitute that 1/2 cup of green bell pepper (er green icky) with a cup of spinach and that recipe gets close to my recipe for meatloaf.  substitute oatmeal for bread crumbs and sprinkle in some grated cheese and it's basically what I came up with years ago for my meatloaf.
