Jake had friends over so I hit the egg... chicken in the marinaded in a Chipotle pepper sauce. Chicken and cheese.

Threw some scallops on for a snack. Nothing special.. 2 with Old Bay and 2 with @Mickey‌ coffee rub.

Grilled done onions to add to the meal

Finished the quesadilla with black beans, the onions, chicken and cheese.

My quesadillas are made out of leftovers. Making them fresh looks much better!

It's just a kroger Chipotle dressing. ..has a great flavor though.

I'm interested ... Tennessee isn't known as the hotbed of quesadillas.  Do you make your own tortillas?  Any special brand if not homemade.  Do you make them with other fillings?  Vege quesadillas happen to be my wife's favorite ... it'd be neat to make them.  Thanks in advance for any hints you can share.

@jeepster‌47....I didn't make my own this time. I use the small ones...they are easier to flip.i egged the chicken and onions earlier in the day while watching my Vols butthurt Iowa.

Butter the bottom tortilla, butter side down
Fill with whatever you want
Butter top tortilla
400 iindirect on my ci platter
Flip when golden brown

Really easy and a customized crowd pleaser.

@Jeepster47‌ you can do these on the grid too. I've put them on with no butter and just crisp them. A little different at they get real crispy almost like a taquito. Both are good.
