@shtgunal3 I believe "happy rag" is referring to the foil under the tip of the flat.

How was that ginger beer? Looks interesting enough to buy the sampler case, but not sure about a whole case. Any thoughts?

The foil is there to protect the part of the brisket that stuck out over the plate setter.

This thing was awesome. It was as juicy as any Boston butt I've ever cooked. The point was almost too fatty. I actually think I preferred the flat on this one.
