I must be a good dad. My son couldn't pass up a prime brisket so we cooked one today.
We were in HEB picking up a few things for Christmas day and my son and I noticed that they had prime brisket for $4.95/lb. As he picked them up, one of them was so floppy that we decided that we had to have it - so we picked up a 14 pound packer. We have no real need for it over the next two days, but figured it would make some good sandwiches or chili over the holiday season even if it didn't turn out perfect. We cooked bacon on the egg for breakfast and then stabilized it at 290 with the platesetter in place. Rubbed it with Montreal Steak seasoning and Kosher salt. We foiled it for the last hour because we had to meet some friends for dinner and needed to get it to the finish line before we left. I hadn't planned on taking pics and posting this here, but when the slices of the flat folded over the knife as had been previously demonstrated by @Cazzy, I decided I would brag about what a great parent I am for raising a son (now 17) who appreciates good meat, outdoor cooking, and a chance to do it with his dad.
(note: I realize that having a son who cooks a good brisket doesn't make me a great parent)

@SGH, I hope you recognize the knife. Thanks for the recommendation. I should tell you that the main use I have found for the 14" cimeter so far is as a pizza cutter. The 8" cimeter and the slicing knife are getting good use though.
@Cazzy, thanks for the idea of folding it over the knife.
@travisstrick, I guess I would have had to buy 2 briskets at that price. I didn't see $4.95 as a bargain but I thought it was very fair.
