Sunday Short Ribs... Breaking in the New Cast Iron
Breaking in the new Le Creuset dutch oven along with some other QVC brand enameled cast iron... Don't think the egg will be engaged today. Though I may just do a little bit of clean out burn with some smoke just for the heck of it.
Doing the beef bone in short ribs low n slow in the DO and then plating them on some cheesy polenta...
Pics to follow along...
Also got some free stuff from the guys at Meat Church... they want me to try it out and let them know what I think. They reach out to me on Instagram

Sounds like a fun cook to me. Basically using the DO like a crock pot? Will this impart any smoke flavor?LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

@hapster Does the LeCreuset get gunky, you know who is going to be pissed if I put "HER" LeCreuset in the egg and it get gunky...

I think this is an inside cook....Still to early to pop the cherry on those beauts...Greensboro North Carolina

@TheShaytoon-you are treading into dangerous waters...You may want to get your own DO. Could be a life-saving deal >- FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I use my creuset on the egg....it will get some color, it does so in the oven to. The darker color will help as mine is creme.Seattle, WA

First off; this is my DO... Wife isn't even sure why I wanted it; hoping that dinner later changes that LOL...
It is an inside cook today; just wanted to break it in and decided to lessen the stress of adding in making it an egg cook this time. Does real good at searing...

Is it best to break in CI DO inside vs egg. Or is it because of the enameled exterior that your doing the break in inside.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

Nah... Just since it's the first cook with it, and a dish I've never made before. Not too worried about the finish on it being in the egg. The included paperwork says it's fine on a grill or over open flames.NPHuskerFL said:Is it best to break in CI DO inside vs egg. Here it is ready for the oven. House smells insane...
I'm outside enjoying the relatively mild weather on this "shortest day of the year" with my favorite stick and some Sailor Jerry.
Dinner should be ready in a little while and later for dessert I've got pecan pie and vanilla ice cream.

Nice. I love our le crueset pieces. When on the egg you can either wipe a thin layer of soap on the outside, wrap in foil to help cleanup. These days I just use bar keepers friend. Smoke comes right off.Dunedin, FL

This is my 2nd piece and I have some other brand enameled CI as well. Have a big bottle of Bar Keepers since I switched all my cookware over to Calphalon stainless a few years ago.yzzi said:Nice. Brilliant work sir. The only thing in my kitchen that gets more use than my le crueset DO is my chefs knife. They are the BGE of indoor cooking, so versatile and so durable.XL BGE, Blackstone, Roccbox, Weber Gasser, Brown Water, Cigars -- Gallatin, TN

Awesome hap! By far my fave way to do short ribs. Looks like we do them very similarly. The cheesy polenta is a nice touch. You ate well tonight for sure.Keepin' It Weird in The ATX FBTX
