Rack of pork with smoked apples

Bought a Costco rack of pork and cut into chops. I read where some folks were cutting into 2 bone chops. You guys must be starving!
Anyway, cooked indirect 300 ish to 140IT and then dropped the grid for a little sear about a min each side.
Cored and split some apples and filled void with cinnamon, brown sugar and butter. They cooked on the grid with the chops for the indirect portion, about an hr.
Served with spicy garlic steamed broccoli.
Rockwood with apple chunk smoke.

Thank you @SGH and @nolaegghead@johnkitchens , the apples were very good smokey and sweet. Cooked just enough to be soft. They reminded me of the ones my mom baked when I was a kid, only with smoke.

@DMW @Gman2 @smasch @minniemoh @shtgunal3 thanks you for the kind words@SGH the apples were very good, sweet and smoky. The only thing I'd do differently might be to put them in a pan with butter, cinnamon and brown sugar for more of a braise. The juice all escaped from the foil pouches when they were plated. Definitely something to do again. Would also be good with a melted caramel in the middle for desert.

@JRWhitee just curious, why do you go with 2? There's four of us and I cut three chops that we're from 1.75-2.75" thick. I still have 60% of the meat in the freezer and almost a whole chop leftover. I'm learning here. What is the advantage?

@theyolksonyou, looking yummy. I seen french trim pork rib roast at one of the grocery stores I go to that I want to try when I can egg again. I guess if I begged enough I could teach my wife. She had an issue lighting the gas grill and then she would forget about the meat and burn it. She likes to do other things in when she would grill. She doesn't have the patiences for it. I think the thicker they are the more tender the chop and juicier. @JRWhitee I appreciate the feedback. When I cook the rest, I'll try 2 bone. It was all I could do to finnish one bone tonight. That thing was huge. We can split a couple for the four of us. Although, I gotta say these were pretty juicy as they were just this side of 145IT. More rare than I usually eat pork, but I'm hooked.

@JRWhitee I read your post the other day about 2 bone chops, so that was my plan. When I broke that bad boy out and looked at a 4-4.5" chop, I knew I couldn't do that. The one on the plate is as tall as a med apple.

I cook that kind of pork to 135F. You're not gonna get trichinosis from commercially farmed pork. Wild pork, bear meat, redneck backyard pork, cook it moar.
