Hmmm ... apples smoked with apple smoke ... that does make me smile. Why did you slice the apples? I've only seen baked apples with an uncut skin ... to keep the juice from running out is what I surmised.
A two bone chop feeds the two of us one dinner with leftovers for my lunch on the second day ... like you, I can't eat that much anymore. Looks like you used a rub on the chops ... yes/no? Wonder if cooking a two/three/four bone piece, slicing, and then, searing would yield a juicier chop? Any thoughts? Either way, chops from the Costco rack is on the to-do list now. Thanks for the post.

@Jeepster47 on the apples I was going for a blooming onion type deal. Honestly, I think they could either be cut one more time in a concentric circle, or just sliced and put into a pan all together.if I remember correctly the chops were just EVOO salt and a heavy hand on the pepper and knowing me, some cayenne. I still have 5 bones on the roast in the freezer I plan on cooking as one and the slicing with a fruit sauce on the table. I may try your suggestion and slice then sear. Thanks.
