Do you add Oak wood chunks when using Ozark Oak?

For those you that use OO lump do you also add additional wood chunks ie Post Oak?

    That's a tricky one. But let me take a shot at it. If cooking a very large primal then I do add more oak. On some of the other large subprimals I add oak as well. This is just my opinion and how I do it but on any thing over 4 pounds add more wood. Why? Simple. There is enough thermal mass to handle the additional smoke with ease. On brisket, clod, shoulder, whole loin, (primals and very large subs) by all means, add more wood my friend.

    The reason why I like Ozark Oak is that it's so neutral in flavor. It's not real heavy in smoke like other brands. So when I do use chunks I'm looking to add a specific flavor of smoke and taste.

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. 

  • I like adding a chunk of hickory to my oak lump charcoal.  

    Oak and hickory create a traditional BBQ flavor...IMO.

    While not necessary I always add my wood. Sometimes I place it gently in the firebox but other times I sling it in.
    Green egg, dead animal and alcohol. The "Boro".. TN

    Ozark Oak is not oak charcoal. It's a blended hardwood charcoal. There may be some Oak in there but they don't claim that. Royal Oak is not oak charcoal either (nor is it part of the royal family of charcoals)  Bastard marketing people :) 

    Adding wood is totally different than cooking over any charcoal. Charcoal is carbon. There are none of the wood characteristics left so adding wood will enhance the flavor

    I like to sling some wood when I pick up OO from folks on the side of the interstate.
