Thanks for the kind words my friend. Just a note. Anyone that has the Victorinox knives, I will gladly cut the factory edge off of them and rebevel them to a wicked 19 degree semi hollow ground edge. That is what was on my knives at brisket camp. It makes a huge difference my friends. I offer this service free of charge to any forum member or BBQ Brethren member. Also note that I only offer this service on the big breaking knives and splitting knives.Location- Just "this side" of Biloxi, Ms.

I go about half and half also, with the lid. I go by the flavor and thin/thickness of the broth. I think having the lid off at first helps it evaporate and concentrate the flavors. Once I get it about where I want it, I cover and let the meat start to fall apart. I can't wait to hear how you it turns out.
