Bacon Wrapped Onion Rings

The woman is out of town for the week so I figured I would treat myself to some bacon wrapped onion rings. I've read a couple of discussions about them and figured it was a good time to try. I made a couple of burgers too. The burgers were standard ground chuck with minced garlic, diced onions and some Raising the Steaks rub mixed in for some flavor. I topped the burgers with smoked gouda cheese and large portabella mushrooms.
I cooked the burgers and onion rings at the same time, indirect between 370-400. I wanted the burger to get a smokey flavor.
Bacon Wrapped Onion Rings:
1. One large yellow onion. Cut the end off and slice thick rings. I popped out the middles and left two layers on rings together.
2. Dip Onion in hot sauce of your choice. I used Frank's Red Hot (I thought I had some siracha )
3. Wrap thin sliced bacon around the onion rings
4. Brush maple syrup over the bacon rings
5. Applied some light rub on top
I washed it all down with a mixed 6 pack of Octoberfest beers.

I find that as the ring gets smaller you need a bit of patience with the bacon wrap process. FWIW-
Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

@lousubcap Thanks! I think I might have looked at that recipe before. I saw a couple of different threads on here about them and decided to try. I was going to use siracha hot sauce (used Frank's instead) but forgot to restock the hot sauce but I did have a bottle of siracha mayo on hand for dipping the finished product.

@StellarEvo I am horrible with times. I usually go when it looks done, since it was bacon, it was an easy call.

@Grillmagic I thought about using a sweet onion but I had some yellow onions on hand. It's my jack of all trades onion and gets pretty sweet the longer it cooks. I will try them with sweet onions though to see the difference.

@henapple I was off today so 6 beers and a glass of RedBreast was all I needed. I usually only do 1 or 2 beers week nights, if I grill. 4am comes way too early the next day.

@Fred19Flintstone-reads like a NASA approved check-list. I would guess the extremely short list would be "beer (case) cold". Everything else is an option! Yours look absolutely awesome.My only attempt was close to an epic fail due to bacon wrapping issues. Lots of bare spots, the bacon wouldn't stay put (even threaded on soaked sticks), etc. Tasted good, looked bad.What's the secret to good bacon management, wrapping-wise?It's a 302 thing . . .

I was all in with the bacon wrapped onion rings as an appetizer. Bacon wrapped onion rings as a burger topping...well...that's just genious.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

@HendersonTRKing I had to use 1 and half to 2 pieces to wrap all the way on the bigger rings. I just made sure I wrapped over the start point to weigh it down. I thought about using tooth picks but I wrapped it tight enough that I didnt have to.
