Thank you... I let them come up to temp on the counter for 1-2 hours before I put them on the coals or egg.
@hapster, do you start your steaks straight out of the refrigerator or room temp?

Total time was probably about 6min for this steak, 2min a side to start, and then about 1min a side to finish up to around 125IT before I pulled and let it rest for about 5minCymbaline65 said:
