My wife's birthday is Monday and I could use some help. I plan on deboning and stuffing a chicken. That's not the problem other than me getting it right. The problem is coming us with some different side dishes. I want to make something different. Anybody have a go to side dish that is sure to amaze?

It would help to understand what you are stuffing the chicken with so that we can understand flavor profiles here are some various ideas garlic mashed potatoes with caramelized onions potato Gelletes which are sliced thin and layered with chevre cheese sauteed bok choy with almonds grilled romaine ceasar saladbasmati rice with saffron and chicken stock risotto with edamame and wild mushroom etcColumbus, Ohio--A Gasser filled with Matchlight and an Ugly Drum.

My thoughts aren't as exotic sounding as @Jstroke ideas, but what came to my mind was a kick butt scalloped potatoes recipe I have made many times or a Spanish rice recipe that is a wowser.Re-gasketing the USA one yard at a time!

you could go crazy with something like couscous with asparagus and peas with dry roasted walnuts, or go the simple root with quartered fresh tomatoes and onion drizzled with peter lugers steak sauce. i think i would go with the garden fresh tomatoes
