    My only question from this thread is Who is @SGH feeding all these cooks to?!?!" I mean, 12 racks - that's a lot of ribs for a "Let me show you something" type of cook. Can't wait to see it and I wouldn't mind being his neighbor.  :D

    I'm hoping SGH gets this done before he's sent to SA.  I have no doubt he can do it, but I do want to see the pics.  I smoke my ribs after I slice them into individual ribs, and I can stack 7.5 racks in my vertical electric water smoke this way, and it isn't the most economical use of space method.
    Large BGE in a Sole' Gourmet Table
    Using the Black Cast Iron grill, Plate Setter,
     and a BBQ Guru temp controller.

    Medium BGE in custom modified off-road nest.
    Black Cast Iron grill, Plate Setter, and a Party-Q temp controller.

    We never did finish our conversation, but I think the process involved metal skewers, standing the ribs on their sides and leaving space to allow air to circulate.
    I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca.

    that does work really well and is an economical way to get that many racks of ribs on a large.  But, having the adjustable rig setup with the multi grid system costs some money but is so worth it if you can swing it.  the multigrid system opens up an whole other world of uses for your BGE that you'll wonder how you got along without it before.  Like I said, you'll spend some money but the way I justify this to the boss is that I tell her, hey, I don't own a set of golf clubs and I don't go fishing or hunting.  My hobby is centered around the BGE.  She can't argue with that.

    @westernbbq‌ my bride actually introduces our guests to our egg and explains this is my mistress that she loves her too. With the Max arriving this week she jokes and says so your mistress is finally gonna have the baby? She says sweet! More room for cooking. :)) That's my girl! She totally gets it ;)

    I initially asked the 'how many ribs' question, because on the BGE website one of their selling points is that you can cook '7 racks of ribs vertically' ... no AR, no extra grate .. no tricks ...  just 7 racks of ribs on 'their' grate.

    I'd really like to see how the folks @ BGE accomplished this feat.

    That pic is what I envision heaven being like.  Incredible!  I must investigate this multi-tier system you speak of.

    as to BGE's claim of the number of racks one can do on a large with little to no extra accessories, they are referring to using an inverted vertical rack.   I've never done this because the issue I have with it is that the ribs' upper edges could dry out while the bottoms might not get enough of the smoking mojo.  I don't do competitions but spoke with people who work at Corky's, Rendezvous and a couple of other places and every one of the pitmasters I've spoken to said that the ribs must be laid out on a grid, with the underside (concave?) side facing down so you can baste the ribs while cooking.  Standing them on one side works if you can rotate and provide even cooking for both sides but that gets to be a pain too.


    I've done them with multigrid system and for the next tailgate party, between the XL, L and the two mutigrid setups I have, I will be able to do 15 racks at once (3 per grid on xl, 2 per grid on L) without crowding them and 15 racks coincides with ONE case of ribs from my local pork purveyor (3 racks per pack, 5 packs per case) and should easily feed 30+ folks at my next tailgate.

This way one can load 12 racks and shut the dome until they are done. No having to move them around or check anything. Simply load 12 racks and cook 12 racks worry and hassle free. And they will all cook the very same. No over cooked spots nor any under cooked spots. Just 12 perfect racks of ribs on the standard grid.
