Maple sausage stuffed chicken ballotine wrapped in bacon! (lots of pics)

The title says it all... I am getting better and better every time. This time, I stuffed the chicken ballotine with a mix of bread chicken stuffing and maple sausage. My best so far. I made a dry rub using a BBQ spice mix from Épices de Cru (grinded the spices in a mortar and added maple sugar).
~1.5 hours @ 400F to reach an IT of 165F

Wow that's a wonderful cook! Congratulations!
This will give me the inspiration to try again with this method. The one I attempted today ended up looking like a chicken blob. I mistakenly removed the bones from one of the wings before I peeled the skin off the carcass, resulting in a half pulled carcass with all sorts of bones sticking out. Ah well... Live and learn.
Again, that's a fine looking cook. I like the maple sausage stuffing idea a lot. -

Classy place settings too! Mine are usually paper plates and red solo cups. There is always the big roll of paper towels for napkins. I am having some friends over Sunday for a guinea pig mystery meal. No, we are not eating guinea pigs. I like to try out new recipes on unsuspecting friends. I am thinking stuffed meatloaf but may do a little more research on this type of cook. Thanks for the idea.

Not sure... This one was sweet because of the maple saussage. @NPHuskerFL made one stuffed with vegetables and @ChillyWillis made one with pesto, roasted red peppers, tomatoes and mozzarella. Both looked mighty tasty. Possibilities are endless.pantsypants said:You have perfected the ballotine !!

I am working on sides to accompany it. I think that I am onto something but it is not cooked on the egg: sweet corn fritters. More to come in the next few days. I am cooking one again saturday. If you wanted to get really crazy with it you could make several different types of stuffing, debone a turkey, duck, and chicken and make a turducken.pantsypants said:You have perfected the ballotine !!
