You have perfected the ballotine !!
If you wanted to get really crazy with it you could make several different types of stuffing, debone a turkey, duck, and chicken and make a turducken. \m/
Where do you go from here ? ?canuckland -
Or a gooturdukenail and toss the whole thing in a goose..... @-)

Curious how the skin turns out wrapped completely by bacon.. Does it get crisp?

It looks good @GlennM - What did you use for stuffing?
Thanks @PNWFoodie , @johnkitchens , @NPHuskerFL
@pwg56 - The skin/bacon was perfectly crisp. To achieve that, my opinion is that the egg temperature has to be at or over 400F for some time. For that reason, I avoid using rubs with a high sugar content. The one I used did no contain any but I added some Maple Sugar to it. I think that the sugar helps to achieve a crispy skin but it is also easier to burn if you are not careful.____________________Entrepreneurs are simply those who understand that there is little difference between obstacle and opportunity and are able to turn both to their advantage. •Niccolo Machiavelli
