Tropical Burger Paradise

I've never made a turkey burger mainly because I figured it would be dry and bland. After much research alas I found a method I liked (Rachael Ray). I did not however use the exact same ingredients. Started w/ 2 yellow bell peppers, 1 orange bell pepper, 3 jalapenos peppers, 3 multiple colored mini sweet peppers, agave, honey, cayenne, chipolte, cilantro, parsley, dried cumin, kosher salt, coarse black pepper and a quick drizzle of EVOO and then chilled. Fresh pineapple sliced and some sweet peppers. Mixed in the ground turkey 93% lean. Made individual burgers and placed in the freezer to set up. Set-up was direct, 475℉, WGWW w/ chunk of pecan and black cherry. CI pan w/ lite canola to help with crisping. Finished each burger off with reduced fat 4 cheese Mexican shredded and a dab of Frank's Red Hot Sweet Chili. Sweet peppers and pineapple slices reverse seared on CI grid. Plated. Enjoy.

    The moire! It burns!

    One nice tip to keep turkey burgers moist is to add shredded or grated zucchini. Doesn't add a discernable flavor so you can do whatever else you want.

    Never thought about adding zuke. Nice tip @Eggcelsior I have added egg and very finely chopped mushrooms and onions after being sautéed. Those also work great in a turkey meatloaf.

    @Mattman3969‌ I contemplated the egg but, decided on not. They held together nicely with no crumbling. Turned out very moist and a nice full flavor. I'll do it again without a doubt.

    :)) I gotta tell ya. I measured nothing and did it all by palate (taste). Prep took around 30 minutes which was just long enough to get a stable 475℉. The veggies were finely diced so they didn't overpower the burger. A lil sweet and heat was a nice compliment to the turkey. The grilled sweet peppers and pineapple went well w/ the dish.

    @SGH‌ nope I'm up. I'm bouncing from here, FB & BBQ Brethran. Thanks the pineapple and grilled sweet peppers gave a nice SW feel. Might use some black beans next time and really go full on SW. Maybe even with some homemade tortillas with a green chili sauce.

    Cantonese Turkey/Chicken Burgers

    I use turkey instead of chicken. Usually a fresh grind of breast and thigh but have used cutlets. Lighten everything up that I can (wheat bread crumbs) I skip the buns and eat on lettuce.  



    1 egg
    1 teaspoon sesame oil
    1 teaspoon soy sauce
    1/3 cup dry bread crumbs
    1/4 cup chopped salted peanuts
    2 tablespoons sliced green onion
    2 tablespoons shredded carrot
    1/8 teaspoon garlic powder
    1 pound ground chicken
    4 hamburger buns, split and toasted
    1/2 cup plum sauce
    8 spinach leaves, chopped


    In a large bowl, whisk the egg, oil and soy sauce. Stir in the bread crumbs, peanuts, onion, carrot and garlic powder and mix with the ground turkey. Make burgers and Get Your Egg On!!
