Fish, Just for the Halibut

Pardon the pun . . .
SWIMBO and I wanted a healthy meal last night, for what is very likely our only night of the summer when both kids were out of the house at the same time. Given the bounty of summer veggies on hand, I decided to plank some fish and smother it "provencal style".
Left the office early (!), bought a 2 lb slab of fresh fish (halibut looked best), sliced off a couple of 1/2 pound portions, seasoned them with dizzy "Mediterranean-ish" and planked for maybe 25 minutes, til just flaky and still moist inside.
The provencal sauce was a lightly sauteed mixture of rough chopped onion, garlic, tomatoes, baby kale tops (who knew? got them at a farmer's market on weds), kalamata olives, corn (stripped off the cob) and capers.
Perfect summer meal. Paired nicely with a bottle of Whispering Angel rose wine. Maybe a bottle and a half when all was said and done. Made for the 2nd best part of our date night.
It's a 302 thing . . .
