What the cluck…..

Picked up all kinds of chicken pieces and parts from Publix this morning. The haul included a whole bird, bone-in, skin-on breasts, drumsticks, drumettes and wings as well as a St. Louis rack of ribs.
I cooked the spatchcocked bird in a new CI pan (with the handle cut off) - direct at 400. Sat in a little olive oil, lemon slices and sage leaves with a home-made poultry rub.
Meanwhile, 'er indoors did some wings in the big clock as we were pressed for time for guests arriving :-( so no pix. 
Did some snacks for apps this evening - jalepenos, stuffed with a mixture of cream cheese, Italian sausage meat, Boursin shallot and chive cheese, mexican 4 cheese mix and green chillies.
It's all good and more to come. I'll probably grow feathers by the end of the weekend.

    That chicken looks bangin good!! I am thinking of buying a bigger CI skillet or one without handles so I can do this cook. I just can't bring myself to cutting off the handle of Memmaw's skillet.

    @Mattman3969. Keep Memmaw"s skillet - hang it on the kitchen wall and bow in front of it when you cook with a new (cheap), well seasoned Lodge or Outdoor Gourmet. THis is worth every penny of $17.95. and 78 cents for a hacksaw blade. You will NOT regret this.

    whatdyamean open a savings account???  That's so 2013!  That's why we have credit cards...

    After you cut off the handle with a hacksaw, did you use a bench grinder on it for smoothing?  I just ran into this very problem on my medium - couldn't fit the steak in the small CI that fits, and couldn't fit the larger CI because of the darn handle.  Getting out the hacksaw in the morning.

    @tksmoke. You're up early! Yeah, I have a bench grinder and rounded it out. Perfect fit for the medium.
